Bulgur Wheat with a Protein

Ingredients

  • Protein
    • 1 tsp olive oil
    • 1 tsp paprika
    • 1 tsp garlic powder
    • 1/2 tsp cumin, ground
    • 1/2 tsp coriander, ground
    • 1/4 tsp ginger, ground
    • 1/4 tsp cinnamon, ground
    • heavy pinch of salt
    • ground black pepper
  • Bulgur Wheat
    • .5 cup bulgur wheat
    • 1 cup water
    • .5 tsp vegatable stock
  • Tahni Dressing
    • 2 Tbsp tahni
    • .5 Tbsp maple syrup
    • .5 Tbsp coconut aminos
    • 1-2 Tbsp water

Directions

  1. Place bulgur wheat into pot and lightly toast. Add water and vegatable stock. Bring to boil and reduce heat to simmer. Cover and cook 15 minutes. Let sit, covered, off-heat 10 minutes after cooking.
  2. While bulgur wheat cooks, prepare protein of choice (tofu, tempeh, or cooked chickpeas work well) by combining oil and spices with protein in a mixing bowl. Toss to coat. If using tofu or tempeh, roast at 400 degress for 12 minutes, tossing a few times during cooking.
  3. Combine ingredients for tahni dressing in a measuring cup or small bowl. Add enough water to create a thin (but not too thin) dressing.
  4. Transfer bulgur wheat to a bowl. Place protein on top. Cover with tahini dressing. Add walnuts or olives if desired. Enjoy.
