Breakfast Sausage Seitan

Ingredients

  • 1 cup vital wheat gluten
  • 1 Tbsp dried sage
  • 1 Tbsp brown sugar
  • 2-3 cloves, crushed
  • 1/2 tsp marjoram
  • pinch hot pepper flakes
  • 2 Tbsp canola oil
  • 1 Tbsp aminios (go with coconut for a lower sodium result)
  • 1 cup water

Directions

  1. Combine all dry ingredients in bowl of stand mixer.
  2. Combine wet ingredients in bowl and add to dry.
  3. Mix using the dough hook on medium-low speed for 6 minutes.
  4. Wrap dough in aluminum foil, shaping into a log. Twist ends of foil. Alternatively, cut and shape into sausage sized links, wrapping individually in foil.
  5. Place in Instapot steaming basket. Add 1.5 cups of water for steaming. Set Instapot to 25 minutes high pressure.
  6. Quick release when finished. Remove foil and let cool before handling. Cut into desired pieces.
  7. Heat heavy bottom pan over medium heat. Add 1 Tbsp oil. Brown sausage seitan pieces.
