Dinner Rolls

Ingredients

  • 2 Tbsp coconut sugar
  • 1/2 tsp kosher salt
  • 1 packet active dry yeast
  • 2 cups all-purpose flour
  • 1/2 cup plant milk (almond or oat)
  • 1/4 cup water
  • 2 Tbsp plant butter
  • olive oil

Directions

  1. Combine sugar, salt, yeast, and 1 C flour in mixing bowl.
  2. Combine plant milk, water, and plant butter in measuring cup. Heat mixture to 90-100 degrees.
  3. Add wet ingredients to dry. Whisk to combine. Let rest 5 minutes.
  4. With the dough hook attachment, start mixer on low speed. Add 1/4 C flour at a time until dough pulls away from the sides.
  5. Knead on low speed for 5-6 minutes.
  6. Add a drop of olive oil to the bowl. Form dough into ball and let rest 10 minutes.
  7. Cut dough into 8 equal pieces and form into balls. Place the newly formed biscuits in a 8” round baking pan.
  8. Let rise 45 minutes in a warm place.
  9. Brush tops with more plant butter or olive oil. Add a small pinch of salt to the tops if desired.
  10. Bake 15-20 minutes until tops brown and cooked through.
  11. Cool on a cooling rack. Break apart and serve while warm.
